Pastry chef Idan Mimon, former head of some of the leading bakeries in Tel Aviv, including those of chef restaurants Toto and Claro, has always dreamed of a venue that is both a great bakery selling fresh breads and French pastries every morning, and a restaurant serving Italian-French dishes.
